The shoulder is located on the calf shoulder below the neck. It is a very soft and extremely tasty part and is one of the least greasy pieces. Ideal for slow baking in the oven but also for the pot. The thick part of the shoulder is suitable for oven or cooked, the thin part is suitable for grilling or boiling.
